Note: Makes enough for two 9-inch pies (you can freeze the other one)
2 1/2 cups all-purpose flour1 teaspoon salt2 tablespoons sugar10 tablespoons unsalted butter, cut into 1/2-inch pieces, cold10 tablespoons vegetable shortening, cut into 1/2-inch pieces, cold5 to 7 tablespoons ice water1 teaspoon vinegar
Mix the flour, salt and sugar in a large bowl. Make a well in the center and add the butter and shortening. Using your thumb and first finger of each hand, rub the butter and shortening into the flour leaving large flat pieces. Combine the water and vinegar and sprinkle over the top. Gently mix with a fork. Gather the dough into a rough ball. Do not work the dough too much.
Wrap in plastic wrap and chill for 2 hours.
